A live-caught Russian hairy crab from cold northern waters, with a shell covered in fine dense hairs and a full, thick body packed with meat. It is blast-frozen immediately after catching to hold the natural ocean sweetness.
The meat is translucent white, soft and juicy, with a mild sweetness and very little fishiness. Steam it, grill it or boil it plainly: the flavour is delicate enough that heavy seasoning gets in the way.
